Recipe of the Month

Grilled Chicken Wings with Spicy Chipotle Hot Sauce & Bleu Cheese Dipping

 

Ingredients

  • 46 chicken wings
  • Vegetable oil
  • Salt and freshly ground pepper
  • Chipotle Hot Sauce, recipe follows
  • Blue Cheese-Yogurt Dip, recipe follows

Heat grill to high. Toss wings in a few tablespoons of oil and season with salt and pepper. Place on the grill in single layers and grill until golden brown on both sides and just cooked through, about 4 to 5 minutes per side.

Chipotle Hot Sauce:
 

  • 1 1/2 cups red wine vinegar
  • 3 tablespoons Dijon mustard
  • 2 to 3 tablespoons chipotle pepper puree (depending on how spicy you like it)
  • 3 tablespoons honey
  • 3 tablespoons vegetable oil
  • Salt and freshly ground pepper
  • 1 stick unsalted butter, cut into pieces
  • 2 tablespoons ancho chile powder

National Awareness Month

August- National Psoriasis Awareness Month

 

Each August, the National Psoriasis Foundation sponsors Psoriasis Awareness Month, dedicated to raising awareness, educating the public and dispelling myths about psoriasis.

Psoriasis is the most prevalent autoimmune disease in the U.S., affecting as many as 7.5 million Americans. It occurs when the immune system sends out faulty signals resulting in red, scaly patches on the skin that bleed and itch. Psoriasis is not contagious. 

Psoriasis frequently occurs with a range of other health concerns including Crohn's disease, diabetes, hypertension, heart attack, depression and liver disease.

Up to 30 percent of people with psoriasis also develop psoriatic arthritis, which causes pain, swelling and stiffness around the joints. People with mild psoriasis are just as likely to develop psoriatic arthritis as those with moderate or severe forms of the disease.

BEAT THE HEAT in Kansas City!

Soaring temps, high humidity, and the heat index in the 110 degree range,  the ugly beast of August is here and it is no doubt Kansas City is feeling the heat. With a Heat Advisory Warnings issued all week, look to these resources to cool off, stay safe, and help those in need during these blustering summer days.

  • Salvation Army Cool Off Centers, 8 local centers open until at least 5pm.
  • Roger T. Sermon Community Center, Independence.
  • The Channel 9 Fan Club, donates free fans to low income families or those in need.
  • Neigbors4Neighbor, delivers free sandwiches and bottled water to residents in need in the NKC, River Market, and Plaza areas.
  • KCMO and Olathe Public Libraries

Health Care Reform : Patients Bill of Rights

 President Obama announced this week a new Patient’s Bill of Rights as a result of the Affordable Care Act (health care reform).  This is “…a basic set of consumer protections that end some of the health insurance companies worst abuses,” said the President this week.  In addition to preserving Medicare for senior citizens, the Patient’s Bill of Rights

  • Prevents insurance companies from canceling your policy if you get sick.  Now, insurance companies can retroactively cancel your policy when you get sick if you or your employer make an unintentional mistake on your application.
  • Stops insurance companies from denying coverage to children with pre-existing conditions.  Beginning in September, discrimination against children with pre-existing conditions will be banned, and the protection will be extended to all Americans in 2014.
  • Prohibits setting lifetime limits on insurance policies issued or renewed after September 23, 2010.  No longer will insurance companies be able to take away coverage at the time when patients need it most.  More than 100 million Americans have health coverage that imposes lifetime limits.

My mother is 94 had some recent health challenges. We live together and I worked for 35 years while she stayed at home alone. Last year after a hospitalization, I was unable to leave her without care. Always Best Care came as a personal recommendation from my manager, and I was so glad I called. 
 
Michelle (Burdine) was professional, personable and committed to making sure we were completely satisfied with the care. Mother contended she was still fine to be left alone, so the even the first visit and conversation required a large degree of finesse from Michelle. 
 
Michelle came back the next day with the employee she had in mind, and it was apparent that she had high standards for her people.   Mother liked her caregiver and this most reliable arrangement continued until I was recently given the opportunity to retire.
